Coxinha - Brazilian street food



It's not that authentic, i change the ingredients to suite our taste bud and ingredients that available in indonesia

Coxinha

made about 15 pcs 
Bahan
400g potatoes
150ml milk
2 tbsp. butter
1 sdt powdered / cube chicken stock
150g bread flour
Filling
350g chicken breast
1 chopped onion
2 tbsp. finely chopped fresh parsley
1 tsp. salt
pepper

Method
  1. Peel and cut potatoes into medium chunks and place them in a pot with chicken breast. Add water until cover, then boil them until soft for about 20 minutes. Drain and mash the potatoes (in a pot) while hot. Add milk, butter, and consomme, then mix well. Shred the chicken with your fingers.
  2. Heat cooking oil in a pot, add chopped onion, then cook until tender. Add the shredded chicken and finely chopped fresh parsley, then season with salt and pepper.
  3. Put the pot with the potato mixture on low heat, add bread flour, then knead until combined. Leave to cool until you can handle it, then divide it into 10 portions.
  4. Grease your hands with cooking oil, flatten the dough, place the filling in the center, then wrap the dough into a pear shape.
  5. Coat with bread flour, beaten egg, then bread crumbs.
  6. Deep fry in oil for about 6 minutes until golden.


Coxinha

Bahan
400g kentang
150ml susu
2 tbsp. margarine
1 sdt kaldu ayam
150g tepung terigu protein tinggi
Filling
350g daging ayam bagian dada
1 buah bawang bombay, cincang halus
2 sdm daun sup, cincang
1 sdt garam
merica

Metode:
  1. Kupas dan potong kentang menjadi beberapa potongan kecil dan tempatkan didalam panci bersama dengan dada ayam. Tambahkan air sampai menutupi kentang dan ayamnya, kemudian didihkan sampai lunak selama sekitar 20 menit. Tiriskan dan hancurkan kentang selagi panas. Tambahkan susu, mentega, dan kaldu, kemudian aduk rata. Suwir ayam, sisihkan
  2. Panaskan minyak goreng dalam panci, tambahkan bawang bombay, wortel , lalu masak sampai empuk. Tambahkan ayam suwir dan daun sup cincang, lalu bumbui dengan garam dan merica.
  3. Taruh teflon dengan campuran kentang di atas kompor api sedang, tambahkan tepung roti, aduk2 sampai membentuk adonan. Biarkan agak dingin.
  4. Olesi tangan dengan minyak goreng, ambil dan pipihkan adonan kemudian isi ayam di tengah, lalu bungkus adonan menjadi bentuk seperti paha ayam
  5. Baluti dengan tepung roti, telur kocok, lalu tepung roti.
  6. Goreng dalam minyak selama sekitar 6 menit sampai berwarna keemasan.
