Cheddar Cheese (Ogura) Cake II

I am posting about Cheddar Cheese cake maybe it more like Cheddar cheese Ogura Cake for me now.

Still with the same old recipe, i am just adjust the recipe to suit my baking pan.

I baked this cake very often, for this one, i sliced the cake into 2 pcs and fill with whipped cream and plum then topped with cream cheese frosting in rose shape. it look pretty, isn't it?

Please click here for recipe in english, this recipe is suitable for 18cm round baking pan, if you  have 20cm baking pan just like me just adjust the recipe to 33% more. ( Ex: 3 eggs -> 4eggs, 40gr butter -> 55gr butter)

Cheddar Ogura Cake
130 ml susu
40 gr mentega
125gm keju cheddar parut

20 gr tepung terigu
15 gr tepung maizena
3 kuning telur

3 putih telur
70 gr gula halus
1/8 sdt cream of tartar

Cara Membuat
1. Alasi loyang bulat 18cm dengan kertas baking, dan panaskan oven dengan suhu 170 degC
2. Tim susu, mentega dan keju parut dengan metode double boiler, aduk hingga keju larut lalu angkat & biarkan hingga agak dingin
3. Masukkan tepung, aduk rata dengan whisker kemudian masuk kuning telur satu per satu aduk sampai rata.
4. Kocok putih telur dan cream of tartar sampai setengah mengembang kemudian masukkan gula secara bertahap, kocok sampai stiff peak.
5. Masukkan adonan putih telur ke kuning telur dalam 3 tahap, aduk balik dengan spatula hingga tercampur rata.
6. Tuang ke loyang dan panggang dengan metode steam bath selama 50-60 menit.
7. Segera balik ke rak setelah cake keluar dari oven, setelah 5 menit keluarkan cake dari loyang dan dinginkan kembali di rak kawat

Cake lebih nikmat jika diinapkan semalaman dikulkas. Enjoy!!!

Mango Mousse Cake

Actually, i am making this mango mousse cake several month ago, while mango in the season, can find easily in the market.

I am using Cynthia Mango Mousse cake recipe, but only half recipe because i make in 14 cm round pan.

It taste good, but less sweet maybe the mangoes i used are not sweet enough and not all of my family can accept this flavor. They prefer chocolate mousse cake and neither do i.

Mango Mousse Cake

1 loyang bulat 14cm

Sponge Cake Vanila
2 butir telur
50 gr gula
50 gr tepung terigu
50 gr minyak sayuran
Mango mousse
3/4 cup mango pure
1 sdm gula halus
1/2 sdm gelatin bubuk
1 sdm air
1/2 cup non dairy whip cream
1/2 cup mangga potong dadu
Mango mirror
1/4 cup mango pure
1 sdm gula halus
1/4 cup air
1/2 sdm gelatin
Cara Membuat
Sponge Cake
1. Kocok telur bersama dengan gula sampai kental, putih dan mengembang.
2. Masukkan tepung terigu  aduk balik dengan spatula sampai tercampur baik
3. Masukkan minyak aduk balik kembali hingga tercampur rata.
4. Tuang ke loyang bulat uk 16 cm yang sudah dialasi kertas baking dan diolesi mentega
5. Panggang di oven yang sudah dipanaskan terlebih dahulu di suhu 175degC sekitar 30-35menit
Mango Mousse
1. Larutkan gelatin dengan air dengan double boiler.sampai gelatin larut semua
2. Tuang gelatin ke mango pure, aduk rata. Taruh di kulkas selama 30 menit
3. Kocok whip cream hingga kaku (stiff peak). Campurkan bertahap ke dalam mango puree. Aduk rata.
Mango Mirror
1. Campurkan gula dengan mango pure, aduk rata
2. Larutkan gelatin dengan air.
3. Campur keduanya, double boiler hingga gelatin larut

Taruh cake di lapisan bawah, basahi dengan simple syrup. Kemudian tuangi setengah adonan mousse. Tata mango cube di atasnya. Tutup kembali dengan selembar cake dan basahi dengan simple syrup. Tuangi sisa mango mousse nya. Dinginkan di kulkas atas selama 1 – 1.5jam. Siram dengan mango miror. Dinginkan kembali di freezer selama 10-20menit.

Orange cupcake with orange cream cheese frosting

Make an upgrade for my orange sponge cupcake, topped it with orange cream cheese frosting

Feel the double fresh from both orange cake & frosting

Orange Cupcake with Orange Cream Cheese Frosting
25g corn oil
35g fresh squeeze orange juices
3 eggs (large), cold from fridge
95g caster sugar
100g Top flour or cake flour
1/4tp fine salt
1 orange rind
40 gr cream cheese
2 tbsp butter
1/2 tsp orange zest
1 tbsp orange juice
1/4 cup sugar
1. Mix corn oil and orange juices together, set aside
2. Mix flour and salt together, sift them twice, set aside
3. Add egg into the mixing bowl, add in caster sugar, immediately beat it till pale, thick and fluffy
4. Fold in flour spoon by spoon, then add in orange rind, corn oil + orange juices, do not over mix.
5. Pour batter into each cup case until 90% full. Lightly tap on counter top twice to remove air bubbles.
6. Bake at pre-heated oven at 170C for 25mins at middle rack or 190C lower shelf 10mn, middle 5-7mn
Beat cream cheese, butter and sugar until light and fluffy then add in orange zest and orange juice, mix well. Put in pipping bag and let it chill a while in fridge,

Pizza Roll

Still with the same old recipe for both the pizza dough and sauce created the different taste just because you rolled the pizza. it so yummy!!!

I just simply put the black pepper chicken with sweet red bell pepper and kennel corn for the topping.
Don't forget a bunch of mozzarella cheese

note for myself next time, don't spread too much pizza sauce on the bread. it really hard to roll - too slippery. just thinly spread it too the dough.

Pizza Roll
Serve: 9 roll
1 1/2 cup bread flour
1 tsp salt
1 tbsp castor sugar
1 tsp instant yeast
3 tbsp vegetable oil
½ - ¾ cup lukewarm milk
Pizza Sauce
Mozzarella Cheese
Topping (whatever you want)
1. Mix all the dry ingredients and the oil, then slowly start adding the warm milk a little at a time. Get it to a soft dough, the softer the better, knead it very well for at least 8 minutes or more if possible.
2. cover the dough and place it somewhere warm. Leave it to rise to double its size, takes about 1 hour or more
3. Once risen, punch it down, give it a quick knead and with rolling pin roll to 0.5cm thickness dough
4. Spread the pizza sauce, topping and cheese then roll the dough and cut into 9pcs
5. Place into the baking pan, let it rise for 15-20 minutes then bake at preheated 200degC oven around 15minutes.

Tofu Spring Roll and Tofu Ball

I am making this for my lunchbox. it quite easy and can be stock at your freezer
Just thawing it and fry. Really a good solution for cooking in the busy morning
It taste good, soft inside and crunchy outside.

Taste more good while serving hot for the tofu spring roll. So, I suggest to make tofu ball for lunchbox and tofu spring roll for snacking food at home.

Tofu Ball
2 pcs tofu (8x8cm) briefly boiled
50 gr minced chicken
1/2 carrot, chopped
½ onion, chopped
1 gloves garlic
one egg
3 tbsp all purpose flour
sugar, salt and pepper, to taste
1. Wrap the tofu with kitchen towel, mashed and squeezed out the water from the tofu as much as you can
2. Put the tofu in a bowl, combine all the ingredients and mix well.
3. Make a flat small round shape tofu (like burger patty) and deep fry until both side are golden brown.
4. Ready to serve

Tofu Spring Roll
One  recipe of tofu ball ( change the 3tbsp of all purpose flour to 1.5 tbsp)
10-15 small instant spring roll pastry
Step 1 and 2 are same with tofu ball
3. Take one pieces of spring roll skin then put 1 tbsp of the tofu filling. wrap and roll it out.
4. Fry in the hot oil until golden brown.
5. Ready to serve

Perkedel Tahu & Lumpia Tahu

2 buah tahu, rebus sebentar
50gr daging ayam cincang
2 sdm wortel, chopped
½ buah bawang bombay, cincang halus
1 siung bawang putih
1 butir telur
3 sdm tepung terigu
gula, garam dan merica secukupnya
Cara Membuat
Bungkus tahu dengan handuk/tisu dapur, remas-remas sambil diperas sedikit agar air dari tahu bisa keluar.
Letakkan tahu di mangkuk besar, campurkan bahan2 lainnya aduk rata
Bentuk bulat pipih, lalu goreng dalam minyak panas sampai matang kecoklatan
* untuk lumpia tahu, sediakan 10-15 lembar kulit lumpia siap pakai ukuran kecil. dan kurangi 3 sdm tepung menjadi 1.5 sdm saja. Kemudian, ambil selembar kulit lumpia beri isi secukupnya kemudian bungkus dan gulung. Rekat kan ujungnya dengan sedikit larutan tepung. Goreng hingga kecoklatan.

Mini Fruit Tart II

Times flies so fast. It's already September. Must do more better for the rest of this year.

Soft and not to sweet vanilla vla

What more good dessert for sunny day? Its Mini Fruit Tart

Mini Fruit Tart
Make 7 small tart
100 gr all purpose flour
50 gr margarine
½ egg
10 gr cornflour
10 gr all purpose flour
35 gr sugar
1 egg yolk
150 ml milk
1/4 tbsp butter
Variance of fresh fruit as you liked (Mine is strawberry, orange and kiwi)
10 gr melted white chocolate, for crust spreads
0.5 tsp sugar + 0.5 tsp agar agar powder + 50ml water, boiled for fruit glaze
1. Mix flour and margarine using fork / pastry knife until it look like a fine breadcrumbs
2. Add the egg into the pastry to form a dough
3. Place into zip lock/bowl and chill in the fridge for 15 minutes
4. once the pastry dough is firm, mold the pastry into tart case. poke a tiny hole gently with a fork inside the tart base
5. Bake at preheated 200C oven for about 15minutes
Custard Filling
1. Mix cornflour & flour with 4 tbsp of milk and stir in egg yolk until well combine.
2. Boil the rest of milk and sugar until dissolved.
3. Stir in egg yolk & cornstarch batter. Keep stirring until almost boiling. Turn of the heat
4. Add in vanilla essence and butter. stir until well blended. let it cool down.
Take a piece of tart crust, brush the melt chocolate inside the tart, pipping in the custard filling top with the fruit and brush the glaze over the fruit. Let it chill in the fridge before serve.

Chicken Noodle Soup - No Recipe

oops.. sorry this post have no recipe posted


Long long time ago, on one sunday morning i was preparing this chicken noodle soup for breakfast, i got into a lot into much trouble, almost burned the kitchen.. why? because i use very small 12 or 15cm saucepan to grill the bbq chicken. and the fire from the gas stove caught the oil inside pan and the fire up almost 1 meter in the saucepan like professional chef cooking show which show you how to light up fire with some help of wine.  >,<
Luckily i am not afraid when the fire light up, i quickly turn off the stove, bring the saucepan to the sink and the fire disappeared. Thanks God. and i continue to cook the chicken noodle.

This chicken noodle is delicious, the soup is rich with chewy noodle. I like it so much! But a bit lazy to make it again, too many things need to prepare. 

Why i did not post the recipe? Because i don't have any exact measurement for each ingredients.
The Chicken noodle contented, soup - noodles - bbq chicken - ramen egg - tofu puff - green vegetables.
For the soup base, i am using chicken bone, some onion, green onions and carrot for making chicken stock.
For the bbq chicken, i marinade the chicken with chinese cha siew sauce then grill it in saucepan
For ramen egg, soft boiled the egg and marinade one night in dark soy sauce and some sugar.
For noodle, i am using noodle for wonton noodle.

Kolak Pisang Biji Salak ( No Recipe )

Sorry, no recipe again for this post. i just learned how to make this kolak pisang biji salak or potato sweet balls & banana in coconut sauce from my mom, and she does not exact measurement for making this dessert.Also, when i am making this i don't measure it, will do it next time.

This one is my favorite Indonesian traditional dessert, mostly people sold it while Ramadan. But, i just cook whenever i want to eat this kolak. the chewy potato balls and soft banana combine with fragrant palm sugar coconut sauce are just too delicious for me. I like to enjoy it while hot. You may also enjoy it after chill in the fridge suitable for hot sunny day.
