French Almond Cake with Honey & Almond Crust Topping

Good Morning everyone..
It Monday and raining here, really feels the blue monday, just wanna lazy~ing in my bed 

Several month ago (yes, it several month ago,its a late post) i have baked this french almond cake, trying experiencing cake with much amount of almond meal and small amount of flour, i get the recipe for the almond cake from happy home baking but i slightly change the method (i beat egg whites separately until stiff peak). and i topped this almond cake with honey crust almond topping, get the recipe from nasil lemak lover

This french almond cake is really yummy is so moist and light, but too sweet for me, i will reduce amount of sugar from the cake. but if you want to try making this cake, i suggest don't reduce the amount of sugar because me and my family  sweet liked it below standard.. hahahahha

French almond Cake

makes one 20cm cake

Almond Cake
110gr margarine
100 gr sugar
3 egg yolk
3 egg whites
90g ground almonds
40g all purpose flour
1/2 tsp BP
1 tbsp milk
1/4 tsp vanilla essence
Honey and almond crust
45gr almond slices
25gr honey
15gr butter

  1. Pre-heat oven at 180 C. Grease with margarine and flour the sides of a 20cm pan, line the base with parchment paper, set aside.
  2. Place butter, sugar in a mixing bowl, beat until light and creamy.
  3. Add the egg yolks, one at a time, beating well. add in ground almond, flour, BP and milk, mix and combine well 
  4. In a separate clean and grease free bowl, beat egg white until soft peak Take 1/3 portion of egg whites mixture, stir well to the batter. 
  5. Fold in 2/3 portion of egg whites to the batter using spatula until well combine Slowly pour the batter to the cake pan, and bake for 30 - 40 minutes in middle rack. (when you inserted skewer to the cake it comes out clean). 
  6. Prepare the honey and almond crust topping, add butter, honey and almond slices into a shallow saucepan. Heat to melt the butter and honey, ensuring that the almond slices are well-coated with the honey-butter mixture. 
  7. Top the cake with honey & almond crust, bake for another 8 minutes until the almonds are well roasted and golden brown
